Wild Amaranth (Jungli Cholai, Pigweed)

This is a weed that is very much like spinach in taste and therefore can be used in dishes that require spinach either as a replacement or as an addition to it. The young leaves are soft and mild in taste and can be used in salads, much like baby spinach. The older leaves can be cooked like spinach. The seeds are also edible and can be roasted. They are a good source of protein.
