Summer Salads

Come summer and the thought of eating anything greasy , heavy or too spicy is not very enticing. The only things one looks forward to having are fresh drinks and cool salads. Here are two of my very favourite salad recipes.

 

  1. Watermelon Cucumber Salad

This salad has  the perfect balance of sweet and salty.

Ingredients

  • Watermelon: peeled and cut  into cubes.
  • English cucumber : cut into cubes with their skin
  • Mint and basil leaves: About a cup. The leaves should be roughly chopped
  • Creamy feta cheese/ Cottage Cheese: About a cup. Cut into small cubes

For the Dressing

  •  Honey: 2 tablespoons
  •  Lime juice: About 2 tablespoons
  •  Extra virgin olive oil:  2 tablespoons
  •  Salt: To Taste

How to Make Watermelon Salad

Combine the watermelon, cheese, cucumber and herbs. Put in a serving bowl and keep in fridge to cool. Combine the dressing ingredients but add only when serving.

 

  1. Mango Spinach Salad

Ingredients

    • Mangoes-4 to 5 fresh ripe mangos (any variety of mangoes you like)
    • Baby spinach : 2 cups of baby spinach
    • Cucumber: ½ cup seedless cucumber
    • Red bell pepper: Remove the seed and thinly slice the pepper.
    • Pomegranate seeds: ½ cup
    • Fresh mint: ¼ cup roughly chopped

For the Dressing

    • Lime juice : 2 tablespoons
    • Extra virgin olive oil: 1 tablespoon
    • Salt to taste
    • Black pepper powder: ½ teaspoon

Method

Combine the mango,  spinach, cucumber, bell peppers and  pomegranate seeds, and herbs in one large bowl. Keep in fridge. Add dressing just before serving.
