Chickweed grows in a unique intertwined manner. It has small white star shaped flowers. The stems, leaves and flowers of this plant are edible. It can be added to salads or cooked in the same way as other greens. Chickweed salve is great for a gardener’s hands after a long day of weeding! This weed can be used to make a mild, tasty and highly nutritious pesto.
Chickweed Pesto
½ cup walnuts, cashews or pine nuts
2-3 cloves garlic minced
3 cups chickweed finely chopped
1 tablespoon lemon juice
½ cup extra virgin olive oil
Salt and freshly ground pepper to taste
¼ cup freshly grated parmesan cheese
Place all the ingredients together in a blender and blend until smooth.
Keep refrigerated and use within 3-4 days.
